Trader Joe’s Salsa Verde (Instapot) chicken + arroz con pollo
1 bag individually Trader Joe’s Chicken Breast Tenderloins
1 Jar Trader Joe’s Salsa Verde (12ounces)
1 carton Trader Joe’s Organic Chicken Stock (32 ounces)
I have a Foodi and pressured cooked for 20 minutes
(Follow your Instapot instructions)
Once it’s done, place chicken tenderloins in bowl and shred.
This is great for Mexican Salads, Arroz (Mexican Rice) bowls,
Taquitos, Nachos, Tacos, Enchiladas, Quesadillas, etc.
you can take small freezer bags and vacuum seal individual
Size bags for future meals! Easiest chicken ever! Don’t toss the broth,
I am going to share how to make Arroz Con Pollo with it!
Arroz Con Pollo
4 cups salsa verde chicken broth from Instapot (hot, handle carefully)
2 Cups Jasmine Rice (or your choice white rice)
2 tablespoons olive oil
1 can (8 ounce) tomato sauce
1 teaspoon cumin
1 teaspoon garlic powder
2 cups reserved shredded salsa verde (above)
*Optional items
Brown rice in olive oil until golden brown pieces appear(over medium heat)
Add the salsa verde chicken broth, tomato sauce and spices.
Mix well. Cover and cook on “lowest” setting, for 20 minutes.
Check if the rice taste cooked to your liking, then add about 2 cups
Shredded salsa verde chicken on top, and cover continue cooking if
