Bacon and Chicken Chipotle Tacos😳
3chicken breast (butterflied)
3 tablespoons dried minced onions flakes
1/2 tablespoon cumin
1 teaspoon crushed red pepper flakes
1 teaspoon garlic powder
1/2 teaspoon black pepper
Add (chicken and spices) to a large ziplock bag. Ziplock bag and massage spices into chicken- refrigerate 1 hour. After it marinated you will be grilling the chicken.
Meanwhile:
Cook 1 pound bacon. Once’s it’s cooked and crispy, tear into pieces once it cools. Set aside.
Add 1 jar Trader Joe’s Authentic salsa, plus 1 chipotle (canned in tomato sauce) to a blender and blend, pour into bowl. Set aside.
Once chicken is grilled cut chicken into small cubes. Set aside
Slice two avocados. Set aside.
Heat skillet to medium high. Add Mexican cheese (about two tablespoons) to skillet, place a corn tortilla over cheese and allow cheese to melt ( I like crispy cheese so I leave in until I see a crisp on my cheese). Remove cheesy tortilla, carefully and place on a plate… NOW THE FUN PART, assemble! add chicken, then bacon crumbles, avocado slice, a little chopped onions, and chipotle salsa! Cilantro and lime are optional. Dang this is TACO TUESDAY!👋🏼🌮
