Mahi Mahi Tacos

Mahi Mahi Tacos Mahi Mahi Marinade  2 pounds mahi mahi fish Marinade Spice mix 2 lemons juiced 3 tablespoons distilled drinking water 2 tablespoons onion flakes 1 teaspoon crushed red pepper flakes 1 teaspoon onion powder 1/2 teaspoon garlic salt 1/4 teaspoon black pepper 1/4 teaspoon sea salt Place all ingredients in a marinating bowl (with lid) except fish. Whisk. Once all ingredients are well combined, place fish piece of Mahi Mahi fish to cover with seasoning, flip and spread the other side with the seasoning and repeat until all the fish are covered with the marinade spice. Cover or seal and place in the refrigerator for up to 6 hours. Grill fish as you normally would grill to your liking. Once fish is grilled roughly chop with medal spatula or fork.

Make sure everything is ready (Salsa, Crema, Slaw, etc.) so once your fish is grilled you can assemble taco and enjoy hot!  Taco Crema 3 tablespoons Sour Cream 1 Tablespoon Korean Red Chili Pepper Flakes 1/4 teaspoon Crushed Red Pepper Flakes 1/2 teaspoon White Vinegar 1/2 Lime Juiced 1/2 teaspoon Brown Sugar Mix all ingredients well.

Slaw Topping 1/4 Head Red Cabbage Thinly Shredded 1/4 Head Regular Cabbage Thinly Shredded 6 Radishes Thinly Sliced 1/4 Cup Fresh Cilantro Chopped Place all ingredients in a large mixing bowl and toss. 

Optional Queso Fresco (Mexican Cheese) Mango Salsa 1 Mango peeled, and diced in small squares 1 Avocado pitted and diced in small squares 1/4 Cup Fresh Pineapple diced in small squares 1/4 Cup Chopped Fresh Cilantro 1 Large Jalapeño (seeded) finely chopped 1/4 Cup Red Onion finely chopped 1/4 Cup White Onion finely chopped 1 Cup Fresh Tomatoes diced in small squares 1/4 Cup Fresh Corn Kernels

1 Cup Cooked Black Beans  1 teaspoon crushed red pepper flakes Salt and pepper to taste Place all ingredients in large bowl and lightly toss ensuring all ingredients are well incorporated. Corn Tortillas 20 fresh or store bought corn tortillas 

Place 2-6 corn tortillas at a time in a moist paper towels, wrap and microwave for 30 seconds or until soft and tortilla is well steamed. Be careful when handling tortilla steam is very hot!

Assemble tacos Place the fish portion you desire, followed by slaw mixture, crema, mango salsa and queso fresco. Enjoy~
