Buckwheat Pancakes

2 Cups whole buckwheat groats

1 teaspoon vanilla powder

2 teaspoons baking powder

pinch of salt

1 egg 1/4 cup coconut oil

2 tablespoons maple syrup

2 cups filtered water

1 teaspoon vanilla extract

1 cup frozen berries

Add buckwheat groats to a high speed blender (blend until it turns into flour)

transfer to a bowl and add remaining dry ingredients. Give it a stir, set aside.

whisk egg, oil, syrup, and water in a separate bowl.

add wet ingredients to the dry mixture. Blend well to form a batter.

Fold in frozen berries. Add vanilla.

Heat griddle or stove top pan. Spray with coconut spray or a splash of coconut oil.

Spoon pancake batter unto heated & sprayed griddle.

Cook until the pancake(s) create holes and begins to set.

Flip & cook for about another minute or until set.

Remove and serve hot with maple syrup~Yum!!!
